Why Leftover Fried Chicken Stir Fry?

My husband and I both needed to start eating more healthy. I needed to have more fiber in my diet because of my diverticulitis. My husband needed to have a more healthy diet with less meat. He could sit down and eat a 2 pound steak every meal if I would let him. I figured that making stir fries would make a more healthy meal for us with less meat. Saves on the budget, too.

But, why leftovers stir fry? Because if the meat wasn't used, I would have had to throw it out and waste what little money we had at the time. Also, because there wasn't enough meat for both of us if we used the fried chicken as a meal.

Of course, it doesn't have to be fried chicken. It was just what we had at the time. I have used all kinds of left over meat to make my stir fries.

Leftover Fried Chicken Stir Fry

Here's What You Need

We had had some good old Church's Fried chicken an evening earlier in the week. We had 2 chicken breasts left over. I kept looking at the pieces of chicken wondering what I could do with them. Then thought of one of the stir fries that I had been making lately.

To make my stir fry, I would need some veggies. I like to get the frozen bags of stir fry veggies.

Next, I would need something to fortify the meal. So I decided that I would make some rice to go along with it.

Ingredients

  • 2 Leftover Chicken Breasts (or any other type of meat)
  • 2 Tablespoons Olive Oil (for heating meat)
  • 2 cups raw rice (or any other type of base you would like)
  • 4 cups water
  • 2 bags of frozen stir fry vegetables
  • Soy Sauce or Teriyaki Sauce (optional - to taste)

First you need to de-bone and break up your chicken for your stir fry. I left the crust and all on the chicken and heated it up at about medium heat in a skillet with just a little olive oil to keep it from sticking to the skillet.

If you are using some other type of leftover meat, just chop it up into bite-sized pieces and heat with just a little olive oil.

While the meat is heating, I put on the rice. I use my microwave with a microwave bowl to make my rice. I tend to burn the rice when I cook it on the stove.

Place 2 cups of raw rice in a microwaveable bowl with a lid. Add 4 cups of water.

Place the lid on the bowl. Place in the microwave. My microwave is a 1100 watt. Set timer for about 19 minutes.

Once done, stir and place lid over again to keep warm. I usually leave in the microwave until I am ready for it.

Vegetables For Stir Fry

These are the veggies that I use

I like to use frozen vegetables for my stir fries. My favorites are Sugar Snap Stir Fry and Asparagus Stir Fry Vegetables. Of course, you can use any type of vegetables you want to use. You can even use fresh vegetables if that is your choice.

Once the meat is heated through and cooked to your satisfaction, it is time to add the vegetables. I pour them on top of my meat and stir them in.

At this point, you can add soy sauce or teriyaki sauce if you would like to or you can wait until it is done to do so.

I cook this about 30 minutes or until the vegetables are heated to your preference.

Just take the rice and place on a plate or in a bowl. I usually use about 1/2 of the rice per person. Then spoon your chicken stir fry over the rice. Add more soy sauce or teriyaki sauce to your taste.

You are now ready to sit down to a healthy meal with lots of fiber.
