I had been used to cooking for 4-5 people ever since I can remember. It was hard for me to start cooking for just two when the "empty nest" syndrome hit. I always had too much food. I had been raised to believe too much food is better than too little. I could only serve leftovers so much before hubby started complaining that our meals were becoming too repetitious. Because of this, I was wasting a lot of food. My husband and I needed to start eating less. That is how this cookbook came about. I wanted to start making my meals for 2 not 4-5 people.

This cookbook is specifically set up for cooking for one or two. This cookbook would be great for a single person, college student, newly married couple,or a newly divorced or widowed person. The cookbook is divided into categories. To make it even greater, it is in large print and a lot of the recipes have recommended menus. Another good excuse to buy this cookbook is to give to your daughter for her hope chest.

A Few Tips

For Cooking For Two

1. Buy Frozen fruits, vegetables, chicken breasts or fish fillets in bulk when on sale. Just take out and use what you need for that meal.

2. Keep ready-to-eat, low-fat, reduced-sodium canned soups and low-fat frozen meals or prepackaged single-serving foods on hand.

3. Use your freezer to store your foods whenever possible. You can freeze breads, meats, fruits, vegetables, whole grains, and nuts and seeds. By freezing your food, you keep it fresh and keep you from having so much waste. Freeze it as soon as you get it. Don't wait.

4. Cook a big batch of food and freeze the leftovers in individual servings for future use. This way, you only take out what you need. Don't forget to write the date and contents on each of the packages. Make sure you move the older batches to the front each time. This way, you eat the oldest first. Again, it prevents waste.

5. For quick and easy cooking, make one dish meals whenever possible. Put as many of the food groups into this one dish meal.

6. Plan meals so that you can use extras in this meal. A good example is rice. Use it as a side dish with one meal and then add it to a pudding or casserole for another meal.

7. Use the cookbook above to make just enough for you and one other person.

Serving Size

Serves: 2

Ingredients

  • 2 Tablespoons flour
  • 2 Tablespoons water
  • 1 Cup chicken or turkey broth
  • 1 Cup boneless pieces of cooked chicken or turkey
  • Salt and pepper (as desired)
  • --------------------------------------------------------------
  • DUMPLING DOUGH
  • 1/3 Cup flour
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon salt
  • 2 Tablespoons milk

Instructions

  1. 1. Mix the flour and water in a pan until smooth.
  2. 2. Slowly stir in broth.
  3. 3. Cook and stir until thickened.
  4. 4. Add chicken or turkey, salt, and pepper.
  5. 5. Heat to boiling.
  6. 6. Mix dry ingredients for the dumplings together and add milk.
  7. 7. Drop dumpling dough from a tablespoon onto gently boiling mixture to make 4 dumplings.
  8. 8. Cover pan tightly and cook slowly for 15 minutes without lifting lid.
  9. Menu Idea: Serve with green beans and sliced peaches.

I made the broth by putting the left over meat and bones in the crockpot with juice from Chicken and potatoes and left it overnight.Get all of your ingredients together. I doubled the recipe.Get your pot that you plan to make your Chicken and Dumplings in. I decided on my husband's cast iron pot because it had a lid that would be tight. Big mistake as the chicken and sauce burned to the bottom of the pot. If You Are A Busy Person

try using a crockpot to cook your small meals in. They have lovely small crockpots to help you do this. They are sometimes called slow cookers also. This will save you time and is very convenient in that your meal will be waiting at home when you are ready.
